Serves 4-6 as a light drizzle
2 teaspoons tahini
1 green finger chilli, seeds removed (optional)
Juice of ½ lime
2-3 tablespoons hot pre boiled water
salt to taste
De-seed and chop the chilli very finely, if you are using it. You can also leave the seeds in if you prefer a hotter drizzle. In a mixing bowl combine the tahini, lemon juice, adding hot water to mix until you have a drizzle consistency. Lastly add the chopped chilli and salt a little at a time to your required taste. Set aside to cool before using.
- Makes a good stock dressing as you can vary the amount of water and lemon juice to make it thicker or thinner.
